Explode in Your Mouth Chicken

4 boneless chicken breasts 
8 jalapeño peppers 
16 strips of bacon
4 oz cream cheese, softened
1 cup grated Colby jack or cheddar cheese
1 cup BBQ sauce
Salt and Pepper to taste

Butterfly each breast (Slice all the way through so with each breast you have two slices). Slice jalapeños in half and deseed. Mix cheeses. Put 2 tbsp of cheese mixture on wide edge of chicken slice and 2 jalapeno slices and roll chicken. Bacon will hold it together, so don't worry if its popping open.

Wrap each breast with 2 slices of bacon. Wrap tightly and tuck the ends of the bacon under the strip itself.  Baste with BBQ sauce. Bake, uncovered, at 375 degrees for 1 hour.

Yields 8 breasts
