Cat Head Biscuit Recipe

I'm not sure how many folks have ever heard of Cat Head biscuits, much less eaten one, but they are slap your mama delicious. Unlike the biscuits we make today, these are made with some sort of animal fat. Whether you use lard, bacon grease, or butter, Cat Head's are not good for the body but great for the taste buds.


2 cups of self rising flour
1 cup of buttermilk
2 Tbsp of lard, butter or bacon grease.
Preheat oven to 400 degrees. In a large mixing bowl, sift flour. Place lard in middle of flour. Slowly pour in milk as you hand mix lard and flour. Continue until all milk is incorporated. Dough should be so soft that when you pick up a cut biscuit with 3 fingers, it just falls apart. Flatten to about an inch thick and cut with biscuit cutters. Lay on baking sheet and rub tops with melted butter.
Cook at 400 degrees for about 20 minutes or until golden brown.
