4th of July Blueberry Muffins

Recipe for Blueberry Muffins

4th of July Blueberry Muffins


2 cups of self-rising flour
½ cup of granulated sugar
1 egg (beaten)
¼ cup of vegetable oil
¾ cup of milk
1 ½ cups of blueberries
¼ cup of packed of brown sugar
2 tbsp self-rising flour (reserved)
1 tbsp of butter (softened)

In a large mixing bowl, combine flour and granulated sugar. Mix. Reserve 2 tbsp of mixture. Make a well in the center of remaining mixture.

In a small mixing bowl, combine egg, oil and milk. Mix well. Pour into well of dry mixture and stir until blended well. Pour in blueberries and stir. Spoon mixture into greased muffin pan.

In a small mixing bowl, combine brown sugar, reserved flour and butter. Mix with a fork and sprinkle over the top of muffins.

Bake at 400 degrees for about 15 to 18 minutes.

Yields 18 yummy muffins.
