Bacon Ranch Potato Salad

Bacon Ranch Potato Salad
This is an easy, Fantastic twist on an old favorite.


2 1/2 lbs. of Red Potatoes - Diced with skins on

2 Ribs of Celery - Finely Diced

1 Bundle of Green Onions - Dice entire onions with tops

1 Package of Bacon - Cook until crisp

1 Cup of Buttermilk Ranch Dressing

1/2 Cup of Fresh Parsley or Fresh Chives

Salt and Pepper to taste


Directions:  Boil potatoes, in salted water, until tender. Do not over cook.  Drain. Pour potatoes in a large mixing bowl and mash potatoes with a masher. Next, pour dressing over potatoes and mix. Pour onions, celery, pepper and parsley over potatoes and mix. Finally, crumble bacon over mixture and stir in. Refrigerate for 2 hours. Add salt if needed.

This will serve about 12 people.
