Mexican Restaurant Rice Recipe - Must Try

Mexican Rice Recipe with Fried Rice


1 Bag of Knorr Chicken Fried Rice (I know, but trust me on this)
1 Bag of Instant Boil in bag White Rice
1 Can of Rotel
1 Can of Chicken Broth
1 Cup of Diced Onion
1 Cup of Finely Chopped Cilantro
1 1/2 Cups of Water
2 Tbls of Butter
2 Tbls of Olive Oil
1 Tsp of Minced Garlic
1 Tsp of Taco Seasoning

Melt Butter in a frying pan and add Olive Oil. Toss in Onions and cook until they start to turn translucent, then add in the Fried Rice and White Rice. Stir rice until it starts to brown, then add Garlic and the can of Rotel (do Not drain). Turn burner down to low. Stirring, slowly pour in the can of Chicken Broth and 1 Cup of Water. Stir occasionally until most of the liquid cooks out of the rice. Rice should be tender. Now, add Cilantro, Taco Seasoning and 1/2 Cup of Water. Stir until most of water cooks out of rice. Allow to sit about 10 before transferring to serving dish or serving. Rice should absorb remaining liquid.

This is the best Mexican Rice. To jazz it up a bit, you can add melted Queso cheese when serving. My family loves this rice with any Mexican dish I make.
